HEAVENLY NOODLES WITH BEEF 
One large heavy skillet:

2 tbsp. vegetable oil
1 1/2 to 1 3/4 lean beef chunks (round or sirloin)
12 oz. pkg. of bow ties or wide egg noodles
6 med. potatoes
1 good sized onion
Salt & pepper

Coat beef chunks in flour, then sprinkle salt and pepper and brown with chopped onions in vegetable oil. After browning meat and onion add boiling water to completely cover meat. Simmer slowly for 1 1/2 hours adding boiling water from time to time if any has evaporated. Remove meat from gravy and cut into VERY small pieces; remove gravy from pan (scraping all browning particles); combine with meat and set aside.

While meat is simmering, prepare 12 ounce package of bow ties or noodles according to package directions; drain and set aside.

Peel 6 potatoes, slice VERY thin and set aside.

Using a 3 to 4 quart casserole layer the 3 main ingredients: FIRST - meat with gravy; SECOND - bow ties (or wide noodles); THIRD - sliced potatoes (sprinkle of pepper to this layer).
