SAVORY BEETS 
1 can sliced beets
4 strips grilled bacon, finely chopped
2 tbsp. flour
1/4 c. vinegar
2 tsp. sugar
2-3 tbsp. butter
2-3 tbsp. diced onion, optional
Salt and pepper to taste

Drain beets, saving 1/2 cup of liquid; set aside. Mix butter, bacon and flour in saucepan until butter melts. Add beet liquid, vinegar, sugar and onion; cook over medium heat until mixture thickens, stirring constantly. Add beets, heat thoroughly.
