STUFFED PORK ROAST 
1 (4-5 lb.) rolled pork roast
2 tsp. poultry seasoning, divided
2 tsp. salt, divided
3/4 tsp. pepper, divided
3 c. bread crumbs
3/4 c. chopped celery
1/2 c. chopped onion
1/2 c. butter

Season roast with 1 teaspoon poultry seasoning, 1 teaspoon salt, and 1/2 teaspoon pepper. Combine remaining ingredients for stuffing.. Fill roast cavity with stuffing. Skewer edges. Place fat side up on roasting pan. Bake at 350 degrees for 1 1/2 to 2 hours, or until roast tests done. Serves 6-8.
