TOM'S TOMATO FRITTERS 
1 c. all-purpose flour
1 tsp. baking powder
1 tsp. sugar
3/4 tsp. salt
Rounded 1/4 tsp. dried basil or 2 tbsp. fresh minced basil
1 lb. fresh minced summer tomatoes, drained
1 tbsp. onion, finely chopped
1 tbsp. parsley, finely minced
1/2 tsp. Worcestershire sauce
Vegetable oil for frying
1 egg

In a large bowl, combine the flour, baking powder and salt, sugar and basil. Drain the tomatoes well on paper towel. Add them along with the onion, parsley and Worcestershire sauce to the flour mixture; but do not mix in. In a small bowl, beat the egg and add it to the tomato flour mixture. Blend lightly with a fork. To an electric skillet heated to 350 degrees, add 1/4 inch of oil. Drop the batter by tablespoons, patting them down a bit into the hot oil. Fry until golden brown on one side. Then turn and fry on the other side. Keep fritters warm in the oven until serving time while frying the remainder. Wonderful!
