TOM'S UGLY BREAD | |
STARTER: 3 tbsp. instant potatoes 3/4 c. sugar 1 c. warm water Combine ingredients and stir well, leave on counter all day, 8-10 hours. When starter bubbles and smells like sour yeast. Place in refrigerator. Feed starter every 3-5 days. UGLY BREAD: 1/4 c. sugar 1/2 c. corn oil 1 tbsp. salt 1 c. starter 1 1/2 c. warm water 6 c. bread flour Mix in large bowl until makes stiff batter. Oil another large bowl. Put dough in bowl, turn to oil top. Cover and let sit overnight. Next morning, punch down and divide into 3 loaves. Knead each part. Put into a greased loaf pan and brush with oil. Let rise until dinnertime. Bake at 350 degrees for 30-40 minutes. Remove from oven and brush with butter. It's ready. I call this ugly bread because I cannot get it to look right. But it's the best bread I've ever eaten. |
