SOUTHERN CALIFORNIA FOIL - STEAMED HALIBUT | |
1 tbsp. butter 6 halibut steaks, 3/4 inch thick Salt Freshly ground pepper 1 1/2 tsp. each lemon, orange, and lime rinds, very finely grated 1/3 c. chopped coriander leaves Grease six 9 x 9 inch squares of foil with butter. Salt and pepper the halibut steaks; sprinkle each with a good pinch of mixed lemon, lime, and orange rind and 1 tablespoon of chopped coriander leaves. Put the packets on a jelly-roll pan and bake 10 minutes in preheated 400 degree oven. Open the foil packages and pour the cooking juices of all into a small pan. Reduce the juices by 1/3 and add the remainder of the lemon, lime, and orange rind mixture, coriander leaves, and butter. Place the fish on a plate and spoon 1 tablespoon of sauce over each steak. Makes 6 servings. |
