FRUIT SAUSAGES 
1 c. pecans
1/2 c. pitted dates
1/2 c. diced figs
1/4 c. candied cherries
1/4 tsp. salt
1 c. shredded coconut
1/2 c. seedless raisins
1/2 c. diced candied pineapple
Grated rind of 1 orange
Finely chopped nuts or shredded coconut

Grind pecans, coconut, dates, raisins, figs, pineapples and cherries, using the coarse blade of a food grinder. Add rind and salt; mix well with hands. Shape into little rolls 3/4 inch in diameter and 3 inches long. Roll in nuts or coconut and wrap each roll in plastic, tying ends with fancy cord. Makes 16 rolls.
