CARROT CAKE | |
1 1/4 c. oil 4 eggs 1 tsp. cinnamon 1/2 tsp. baking soda 1 c. chopped pecans 2 c. sugar 2 c. flour 2 tsp. baking powder 1/4 tsp. salt 2 c. grated carrots Beat sugar, oil and eggs. Combine dry ingredients and add to the first mixture slowly, mixing well. Add pecans and carrots. Grease and flour 2 round cake pans or a 9 x 13 cake pan. Icing: 1 (8 oz.) pkg. cream cheese 1 box powdered sugar 1 c. chopped pecans Mix together and spread on cake. |
