ALMOND POUND CAKE | |
1/2 c. applesauce 1/2 c. nonfat milk 1 tsp. vanilla 3 1/2 tsp. almond extract 2 3/4 c. flour 2 tsp. baking powder 8 egg whites 1 1/2 c. sugar Grease a tube pan with vegetable-oil spray and flour it. In a mixing bowl, combine applesauce, milk, vanilla and almond extract, and set aside. In a second bowl, combine flour and baking powder, and set aside also. In a third bowl, beat egg whites until foamy; gradually add sugar and beat until soft peaks form. Alternately drizzle milk mixture and sprinkle flour mixture into egg foam, and fold in. Pour batter into tube pan. Bake at 350 degrees for 50 to 55 minutes. Immediately invert cake, still in pan. Cool thoroughly. Gently loosen sides of cake and remove it from pan. 155 calories per serving, 1 gram fat, 0 gram cholesterol. |
