3 lbs. powdered sugar 2 lbs. peanut butter 1 lb. butter (softened) 3 tsp. vanilla 1/2 bar paraffin (wax) 2 bags (12 oz. each) semi-sweet chocolate chips Mix together well powdered sugar, peanut butter, softened butter and vanilla. You may have to use your hands to really mix it up - I always do! Refrigerate dough for about 1/2 hour to make it easier to work with. Roll peanut butter mixture into 1/2 - 3/4 inch balls and place on wax paper on cookie sheets. Melt chocolate chips and paraffin in double boiler. (Paraffin makes chocolate "set up" better so finished candy does not melt in your hand.) When chocolate and paraffin is completely melted and stirred, dip one peanut butter ball at a time into the chocolate using a toothpick. (Dip each ball 3/4 of the way into the chocolate so the top of the ball where the toothpick is, is left uncovered.) |
