COOL MACARONI SALAD 
1 (8 oz.) box elbow macaroni
1 cucumber
1 sm. jar pimento
1 tbsp. sweet pickle relish
Salt & pepper
1 tsp. salt
1 green pepper
1 lg. onion
2 tbsp. (or more) mayonnaise
Dash of red pepper

Cook macaroni in boiling water with salt until tender; drain. Rinse in cold water. Grind cucumber, green pepper, pimento and onion; mix with macaroni. Add relish, mayonnaise, salt, pepper and red pepper; add additional mayonnaise, if needed. Chill overnight. Serve on lettuce with tomato wedges. Yield 4 servings.
