FETTUCCINE ALFREDO 
1 pkg. fettuccine noodles
1/2 c. freshly grated Parmesan cheese
2/3 c. half & half
1/4 lb. butter
1 egg yolk

While noodles are cooking, beat egg yolk and add to half & half. Melt butter. Place hot drained noodles in a serving bowl. Pour the egg yolk and cream mixture, butter and half of the grated Parmesan cheese over the noodles. Toss noodles with a fork and spoon until well blended, adding the remaining cheese a little at a time. You can double this recipe as a main course for 6 adults.

Variations: 1) Saute seafoods and add a few grains of cayenne pepper to the sauce. 2) Saute zucchini and red peppers. 3) Include smoked salmon.
