DALE'S BAJA-DERVES 
1 1/2 c. shredded Cheddar cheese (6 oz.)
1 (4 oz.) can diced green chili peppers, drained
1 (2 1/4 oz.) can sliced pitted ripe olives, drained
1/4 c. sliced green onion
1/4 c. mayonnaise or salad dressing
1 (4 1/2 oz.) can tiny shrimp, drained & rinsed
36-40 round tortilla chips

In a large bowl combine cheese, chili peppers, olives, onion and mayonnaise or salad dressing. Gently fold in shrimp. Arrange about 20 tortilla chips on a 12 inch microwave-safe platter. Top each chip with a rounded teaspoon of the cheese mixture. Micro-cook, uncovered, on 100% power (high) for 1-2 minutes (low wattage ovens; place 12 chips on a paper plate and cook 1-2 minutes) or until cheese is melted, giving plate a 1/2 turn after 1 minute. Repeat with remaining chips and cheese mixture. You should triple this recipe because they go fast!

Nutrition Information per serving: 151 calories, 7 g protein, 6 g carbohydrates, 11 g fat, 34 mg cholesterol, 331 mg sodium and 66 mg potassium. U.S. RDA: 22% vitamin A, 12% calcium. Serves 36-40 appetizer chips or 12 appetizer servings.
