CHICKEN CURRY SALAD 
1/2 c. cold cooked rice
2 tbsp. salad oil
1/4 c. onion, minced
2 c. celery, chopped
3/4 c. mayonnaise
1 tsp. curry powder
1 tbsp. vinegar
2 c. cooked chicken, diced
1/4 c. green pepper, diced
1/3 tsp. salt
Dash of pepper

Blend curry powder, salad oil and vinegar; mix with rice, onion and chicken. Chill until just before serving. Add celery, green pepper, mayonnaise, salt and pepper. Mix well. Serves 6. Serve on lettuce leaves.
