SHRIMP CASSEROLE 
1 lb. shrimp
Sm. can sliced mushrooms
2 tbsp. green peppers, chopped
2 tbsp. chopped onion
2 tbsp. melted butter
1 can cream of mushroom soup
1/2 c. grated Cheddar cheese
1/4 tsp. black pepper
1/2 c. cracker crumbs
2 tsp. butter

Cut large shrimp in half. Steam cook in butter, green pepper, onions and mushrooms until tender. Add shrimp and stir. Stir in cheese, soup and pepper. Heat, stirring constantly until cheese melts. Pour into buttered 1 quart casserole dish.

Mix cracker crumbs with 2 tablespoons melted butter. Sprinkle over top. Bake 350 degrees 15-20 minutes until golden brown. I like to serve this with rice, a personal favorite of my family.
