HEALTHY OATMEAL CAKE | |
1 1/2 c. flour (white or wheat) 1 1/2 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 3 c. oats 1 c. raisins, dates or blueberries 2 eggs 1 (16 oz.) plain, nonfat yogurt 1/4 c. canola oil 1/2 c. applesauce 1 1/2 c. honey 1 tsp. vanilla In a large bowl, stir together flour, baking soda, cinnamon, salt, oats and raisins (or dates or blueberries). In a medium bowl, stir together the eggs, yogurt, canola oil, applesauce, honey and vanilla. Pour wet ingredients into the dry and stir well. Pour into a well-greased 9 x 13-inch pan. Bake in preheated 350°F oven about 30 minutes. Cool before cutting. Option: Sprinkle a little cinnamon sugar on top before baking. |
