BAKED FISH WITH CARROTS AND ZUCCHINI | |
No-cholesterol cooking spray Pepper to taste 1 lb. fillet of sole 1 med. zucchini, cut into 1-inch sticks 4 carrots, peeled and cut into julienned slices 2 tbsp. liquid Butter Buds mix 1 tbsp. fresh dill 1 clove garlic, finely chopped 1/2 lemon, thinly sliced Steam carrots for 3 minutes on high in a microwave oven. Add zucchini and steam on high additional 2 minutes. Spray a medium sized baking dish with a spray of cooking spray. Season fillets with pepper. Add seasoned fillets to baking dish. Pour liquid Butter Buds over fish. Sprinkle garlic and arrange lemon slices over fish. Add steamed vegetables. Sprinkle dill over top. Cover loosely with foil and bake in oven at 365 degrees for 15 minutes or until fish flakes. Approximate nutrient information per serving: 144 calories, 9 g carbohydrates, 22 g. protein, 2 g. fat, 54 mg. cholesterol. The Roddy family has given this recipe a 5-star rating. |
