EGGPLANT ITALIANO 
1/4 c. butter
1 egg, beaten
1 med. eggplant, 1 inch slices
1 pkg. spaghetti sauce mix
1 can tomato sauce
1 can black pitted olive, halved
8 oz. sliced Mozzarella cheese

Dip eggplant slices in egg, dredge in flour, and brown 3 minutes on each side. Drain slices on paper toweling to absorb oil. Prepare spaghetti sauce with can of tomato sauce and 1 1/2 cans water. Layer eggplant slices in 9x12 inch baking pan. Cover with sauce, olives, and cheese slices. Bake in 400 degree oven for 20-30 minutes. Your family will never know they're eating eggplant.
