CURRIED CHICKEN 
4 c. diced cooked chicken
2 cans cream of chicken soup or cream of celery or mushroom, undiluted
1 c. low fat mayonnaise
1/2 c. sour cream
2 tsp. lemon juice
2 tbsp. melted butter
1 tsp. curry powder
3/4 c. toasted buttered bread crumbs
1/4 c. chopped peanuts
2/3 c. shredded sharp Cheddar cheese

Combine all ingredients except bread crumbs, peanuts and cheese. Spoon into buttered 3 quart casserole. top with cheese, bread crumbs and peanuts. Bake at 350 degrees for 20 minutes or until cheese melts and sauce is bubbly. Yield 6-8 servings.
