DIABETIC DATE NUT CAKE 
1/2 c. butter
1 egg
1 1/2 c. diabetic applesauce
1 tsp. cinnamon
1/4 c. sugar twin
1 tsp. vanilla
1 c. dates, prunes or raisins, cut fine
2 c. flour
2 tsp. baking soda
1 c. chopped pecans

Cream butter, add egg, sweetener, vanilla, applesauce, dates and nuts, mix well. Sift dry ingredients and add to above mixture and beat. Turn into buttered and floured loaf pan. Bake 1 hour at 350 degrees.
