ZUCCHINI FRIES 
1 1/2 c. all purpose flour
1 tsp. onion salt
1/2 tsp. ground oregano
1/4 tsp. garlic powder
1 egg, slightly beaten
1/3 c. milk
1 tbsp. olive oil
3 med. zucchini
4 c. Corn Chex cereal, crushed to one cup

In a medium bowl combine flour and seasoning. Add egg, milk and oil. Mix until smooth. Cut each half (zucchini) into eight wedges to form fries. Dip into flour mixture, drain off excess. Roll into Corn Chex crumbs. Coat all sides. Crush more Corn Chex if necessary.

Fry in hot oil for about 2 minutes or until golden brown. Drain on paper towels. Sprinkle with grated Parmesan cheese, if desired. Makes 48. A dip is good to serve with them, too.
