ZUCCHINI FRIES 
4 med. zucchini
1/4 c. flour
Dash salt
1 c. flour
2 egg
1 1/2 tbsp. water
1 c. Parmesan cheese
1/2 c. vegetable oil

Remove ends of zucchini, cut into shoestring strips about 4 inches long. Sprinkle with salt and roll in flour (1/4 cup). Shake off.

Beat eggs with water. Mix 1 cup flour and Parmesan cheese in another bowl. Drop zucchini strips into egg mixture. Then roll in flour and cheese mixture. Heat vegetable oil in skillet or deep fryer. Drop a few handfuls of strips at a time once oil has reached 375 degrees. Fry until golden. Drain on paper towels. Serve warm.
