ARTICHOKE SQUARES 
Fry in oil from 2 (6 ounce) jars of marinated artichokes:

1 bunch chopped scallions
1 clove garlic

Cut the artichokes into small pieces and add to scallions. Beat

4 eggs

Add to scallion/artichoke mixture after removing from heat. Add:

1 tbsp. parsley
6 crumbled soda crackers
1/2 lb. grated sharp Cheddar cheese
Salt & pepper to taste

Pour into a well greased 8 x 8 inch pan. Bake at 325 degrees for 40 minutes. Remove and drain oil. When cooled, cut into 1 inch squares.
