POTATO-BROCCOLI SOUP 
5 med. potatoes, diced
1 c. onion, slice thin
2 c. water
1 c. broccoli (more if desired)
2 c. milk
1/4 c. parsley, chopped
1/2 c. Cheddar cheese, shredded
Salt, pepper, celery salt, to taste

Bring water, potatoes and onions to a boil in a large soup pot. Cover and simmer for 15 minutes. Add broccoli and continue to cook until vegetables are tender. Add milk and parsley and simmer, covered, 10 minutes. Season to taste and sprinkle with cheese before serving.
