BEEF STEAK CHINESE STYLE 
1 lb. filet of beef, sliced 1/2 inch thick and sprinkled lightly with salt and pepper
3 tomatoes, sliced
2/3 lb. string beans washed and cut in 2 inch lengths
1 egg white
1 tbsp. cornstarch
1 tsp. cornstarch dissolved in 2 tsp. water
Cooking oil

MIXTURE A:

1 tbsp. wine
2 tbsp. soy sauce
2 tbsp. cooking oil
1/2 tsp. sugar

MIXTURE B:

1 tbsp. cooking oil
3 tbsp. catsup
3 tbsp. Worcestershire sauce
1 tbsp. vinegar
1 tsp. sugar

Marinate beef slices in mixture A for 30 minutes.

While marinating beef, saute prepared string beans in 2 tablespoons hot oil. Add 1 teaspoon salt and 1 cup water. Cover and simmer until tender, then drain.

Blend 1 tablespoon cornstarch and 1 egg white. Dip beef slices in this mixture. Fry meat slowly in deep oil. Drain.

Heat mixture B in pan. Mix in fried beef and cook briefly over high heat. Thicken with dissolved cornstarch. Remove to platter. Arrange tomato slices and green beans around beef.
