CHINESE BEEF STEAK 
1 lb. beef fillet (cut diagonally in 12 1/4 inch slices)

MARINADE:

4 tbsp. dry sherry
2 tsp. ginger juice
2 tsp. cornstarch
4 tbsp. soy sauce
2 cloves garlic, minced finely
1 tsp. sesame oil
1/4 tsp. baking soda

1/4 tsp. salt 1/2 lb. Chinese broccoli or yu choy 4 tbsp. oil 1 tsp. cornstarch, mixed with 1/4 c. water Pinch of salt 1/2 tsp. sugar 2 tbsp. oyster sauce

Mix marinade and marinate beef for 15 minutes. Heat 2 tablespoons oil, add salt and stir-fry greens 1 minute. Remove to a serving platter. Heat oil and stir-fry beef over high heat until color changes. Combine cornstarch mixture with salt, sugar and oyster sauce. Pour over meat and stir well until thickened. Arrange on top of greens on serving platter. Serve hot.
