SALMON LOAF | |
1 can (15 1/2 oz.) red salmon 3 eggs, beaten 1 c. bread or cracker crumbs 1/2 tsp. salt 1/4 tsp. pepper 2 tbsp. minced onion 2/3 c. milk 1 tbsp. lemon juice Preheat oven to 375 degrees. Drain salmon and add remaining ingredients and mix lightly. Pack mixture into well greased 8x4 inch loaf pan. Put a layer of corn flakes on top. Melt together 2 teaspoons butter and 3/4 cup hot water and pour over corn flakes. Bake in 375 degree oven about 50 minutes. Let stand 1 or 2 minutes before slicing. Serve with creamed peas. Yields 4-6 servings. |
