SKILLET TOMATOES AND ZUCCHINI 
2 tbsp. butter
2 sm. zucchini, sliced
1 med. onion, thinly sliced
2 med. tomatoes, sliced
1/2 tsp. garlic salt
1/4 tsp. basil leaves
Dash pepper
4 oz. (1 c.) shredded Mozzarella cheese
1 c. seasoned croutons

Melt butter in large skillet. Add zucchini and onion; cook over medium heat until crisp tender. Gently stir in tomatoes and seasonings. Cover; cook 3 to 5 minutes or until tomatoes are tender. Remove from heat; sprinkle with cheese and croutons. Cover; let stand 2 to 3 minutes or until cheese is melted. 4 servings.
