ZUCCHINI ONIONS TOMATOES WITH
MOZZARELLA
 
3 c. sliced zucchini
1 c. or more sliced onion
Fresh basil leaves
1/4 tsp. oregano
Pinch of salt
3 cloves minced garlic
1 c. cherry tomatoes, sliced in 1/2
1 c. or more shredded Mozzarella cheese

In 10 inch skillet heat a little oil, add all ingredients except tomato and cheese, cook on low heat, stirring occasionally, until zucchini is crisply tender 7 to 10 minutes. Add tomatoes, sprinkle with cheese, cover, let stand 2 minutes or until cheese is melted. You could use large tomatoes, cut in wedges.
