CREAMY POTATO SOUP | |
6 slices bacon 6 potatoes, cubed 2 ribs celery 2 med. onions 2 lg. carrots 1 c. water 1 1/2 tsp. salt 1 tsp. sugar 1/4 tsp. pepper 1/4 c. flour 4 c. milk 1 c. whipping cream Saute bacon until crisp - remove bacon, crumble and set aside. Add potatoes, celery, onion, carrots, water, sugar and pepper to bacon drippings. Cook covered until vegetables are tender. Combine flour with 1 cup milk until smooth, add remaining milk, cook all together on medium heat, stirring occasionally for 10-15 minutes. Stir in cream and bacon - heat through. Makes 10 cups. |
