CHRISTINA'S CHIMICHANGAS | |
This recipe is fast, easy, cheap and delicious. I get many requests from friends and family for this. And if you want, you can make it look really pretty on a plate! Enjoy! 1 lb. lean ground beef 1 tbsp. oregano 1 clove garlic, minced 1 pkg. taco seasoning 1/4 cup dairy sour cream 1/4 cup taco sauce 2 jalapeno peppers, diced* 2 tbsp. vinegar 4 tbsp. (1/2 stick) butter, melted flour tortillas chunk of cheddar cheese, sliced thin or shredded SUGGESTED TOPPINGS: lettuce, shredded tomato, diced dairy sour cream taco sauce Note: Use 1 pepper if you like mild, 2 peppers if you like medium, and 3 if you like it hot n' spicy. Add hamburger, oregano, peppers and garlic to skillet, brown hamburger until done. Drain grease from skillet. Return to heat, add sour cream, taco sauce, taco seasoning, and vinegar.. mix well and cook for a couple minutes. Remove from heat. Brush a tortilla, both sides, with melted butter. Add filling (hamburger mixture).. about 1/3 of a cup, less for small tortillas and more for large tortillas. Fold tortilla... fold one edge of tortilla towards center, then another edge, and so on... should be 4 folds. Place seam side down in rectangular baking dish. Do this until all filling is gone. Brush tops of chimichangas with butter again. Bake in a 400°F oven for about 15 minutes. Remove pan from oven and top with cheese. Return to oven until cheese melts. To make a really pretty plate sprinkle lettuce in a circle around outer edge of plate. Sprinkle some tomatoes on top of lettuce all around. Place 2 Chimichangas in middle of plate.. not on top of lettuce. Drizzle taco sauce on top of chimichangas, add a dollop or two of sour cream on top, and any other condiments you like with Mexican foods.. olives, guacamole... etc. That's all there is to it! Once you get the hang of this recipe, you can be out of the kitchen and enjoying dinner with your family in less than 30 minutes. Submitted by: Christina |
