SHRIMP CUCUMBER DIP 
1 (4 1/2 oz.) can shrimp
1 med. cucumber
1 c. cream-style cottage cheese
2 tbsp. onion, finely chopped
2 tsp. vinegar
1/2 tsp. horseradish

Drain shrimp; set aside 2 for garnish. Coarsely chop remaining shrimp; set aside. Cut unpeeled cucumber in half lengthwise, remove seeds and discard. Shred enough cucumber to make 1 cup, drain well. In small mixer bowl, combine the shredded cucumber, cottage cheese, onion, vinegar, and horseradish. Beat until smooth using electric mixer. Stir in chopped shrimp. Spoon into serving bowl; garnish with reserved whole shrimp.
