VEAL MEATLOAF 
1 tbsp. plus 1 tsp. vegetable oil
1 c. onions, chopped
1 c. peppers, chopped
2 cloves garlic
1 pkg. instant beef flavored broth
1 lb. ground veal
4 oz. Cheddar cheese
3/4 c. plain bread crumbs
1/2 c. tomato sauce
1/4 c. plain yogurt
2 tbsp. parsley
2 tsp. Worcestershire sauce
1 tsp. chili powder
Dash of pepper

In a 9 inch skillet, heat oil over medium heat. Add onions, peppers, garlic and broth. Cook until onions are translucent. In medium bowl combine vegetables with remaining ingredients. Place in loaf pan. Bake at 375 degrees for 45 minutes.
