SHRIMP CASSEROLE | |
1 lb. fresh mushrooms 1/4 c. butter 2 c. cooked shrimp 1 c. chopped green pepper 1 c. chopped onion 1/2 c. chopped celery 1/4 c. pimento 1 lb., 4 oz. can tomatoes, drained 3/4 tsp. salt 1/2 c. butter 6 oz. pkg. UNCLE BEN'S® wild grain rice, cooked Slice mushrooms and cook in 1/4 cup butter with peppers, onion and celery for about 5 minutes. Combine shrimp, seasoning, pimento and tomatoes. Cook rice according to package directions. Place all in greased 2 quart casserole dish. Dot with 1/2 cup butter. Bake uncovered in 300 degree oven 1 hour. |
