FRIED RICE WITH MEAT 
Serves 4 to 6. Method: Hot frying and simmering.

6 c. cold cooked rice
1/2 lb. fresh shrimp, beef or chicken, cut into sm. pieces
2 eggs, well beaten
2 tbsp. cold water to loosen rice
4 tbsp. oil for frying
1/2 dry onion, shredded

MIX SAUCE:

4 tbsp. soy sauce
1/3 tsp. salt
1/8 tsp. pepper
1 tbsp. wine

1. Add 2 tablespoons cold water to rice and loosen the grains as much as possible.

2. Mix meat and eggs together in a small bowl.

3. Heat frying pan on a high flame to 375 degrees, add oil and heat thoroughly.

4. Fry onion to a light golden brown.

5. Add meat and eggs and cook for 2 minutes, stirring constantly.

6. Add rice and cook for 2 minutes, stirring constantly.

7. Add sauce. Stir constantly for 2 minutes until all ingredients are thoroughly mixed.
