APPLESAUCE CAKE | |
1/4 c. butter 1 c. brown sugar, firmly packed 1 c. sweetened applesauce 2 c. all-purpose flour 3/4 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. ginger 1/4 tsp. nutmeg 1/4 tsp. salt 1/2 c. raisins 1. Put butter in large microproof mixing bowl and cook on High for 45 seconds or until melted. 2. Blend in brown sugar and applesauce. Stir in all remaining ingredients until well blended. Pour into an 8 inch square microproof baking dish greased on bottom only. Cook on High for 7 minutes. 3. Rotate dish and cook for 2 minutes or until no longer doughy. Cool in pan. When cool, frost with cream cheese frosting. CREAM CHEESE FROSTING: 1 (3 oz.) pkg. cream cheese 2 tbsp. butter 2 c. powdered sugar 1/2 tsp. vanilla extract 1 to 2 tsp. milk 1. Put cream cheese and butter in small microproof mixing bowl. Cook on High for 30 to 45 seconds until softened. 2. Beat in sugar, vanilla and enough milk to make spreading consistency. |
