RIGATONI CASSEROLE 
8 oz. ground beef
1/2 c. chopped onion
1 clove garlic, minced
1 - 15 oz. jar spaghetti sauce
1/8 tsp. pepper
15 oz. Ricotta cheese
1/2 c. milk
1/2 tsp. salt
8 oz. rigatoni noodles (about 4 c.)
1 c. Mozzarella cheese, shredded
2 tbsp. grated Parmesan cheese

In large skillet over medium-high heat, sauté beef, onion and garlic 4 minutes or until beef is browned. Stir in spaghetti sauce and pepper. Reduce heat; simmer 10 minutes.

In bowl combine Ricotta, milk and salt. Add cooked rigatoni; toss to coat will. Spoon 1/2 the rigatoni mixture into an 8 x 8 x 2-inch baking dish. Top with 1/2 the Mozzarella and 1/2 the sauce. Repeat. Sprinkle with Parmesan.

Bake in 350°F oven 20 minutes or until heated through.

Makes 6 servings.
