FISH CAKES 
2 c. fish flaked, save some broth
2 eggs
1 c. Progresso bread crumbs
2 tbsp. parsley
2 tbsp. creole mix

Break fish into flakes; add eggs, parsley and creole mix. Add enough fish broth to mix. Refrigerate 1 hour. Shape and roll in cracker meal. Fry in oil.
