SQUASH FRITTERS 
2 c. yellow squash, cooked & mashed
2 eggs, beaten
1 sm. onion, chopped
Salt & pepper to taste
1/2 c. cracker crumbs
Hot oil

Combine squash, eggs, onion, seasonings, and cracker crumbs; mix well. Drop mixture by tablespoonfuls into hot oil. Cook until golden brown, turning once.
