ROAST BEEF AND POTATOES 
2 lbs. stew meat, 2 inch chunks
Salt and pepper
2 lg. diced onion
2 tbsp. oil
1 can mushrooms
3/4 c. milk
3/4 c. sour cream
1 tsp. salt and pepper
1 c. grated cheese
Buttered bread crumbs
1 can mushroom soup

Brown meat with salt, pepper and onion in oil. Add mushrooms with liquid and 1/2 cup water. Heat to boil, simmer 2 hours. Pour into 9 x 13 baking dish. Arrange potatoes over meat. Mix soup, milk, sour cream, salt and pepper. Pour over potatoes. Top with cheese and buttered bread crumbs. Bake at 350 degrees for 1 1/2 hours.
