HAM AND CHEESE MUFFINS 
1/2 c. milk
3 tbsp. oil
1 egg
1 1/2 c. baking mix
1 c. Cheddar cheese
3/4 c. chopped ham
1/2 c. chopped green pepper
1/2 c. chopped onions

Heat oven to 400 degrees. Grease and flour 12 muffin cups. Beat milk, oil, and egg until moistened; add remaining ingredients. Stir with fork. Divide batter among cups. Bake until golden brown. Serve warm. This is great with scrambled eggs.
