SKEETS SEAFOOD GUMBO 
2 dozen oysters, drained
2 c. cooked shrimp
1 c. cooked crabmeat
3 tbsp. flour
1 tbsp. real butter
1 c. okra, chopped
3 stalks celery, chopped
2 bay leaves
1/4 tsp. thyme
2 qts. hot water
3 tomatoes, chopped
6 drops Tabasco sauce or to taste

Melt butter in skillet. Add flour, brown (do not burn). Add okra.

Immediately place in large pot with 2 quarts hot water. Add celery, bay leaves, thyme, tomatoes, and Tabasco. Simmer for 2 hours.

Add oysters and boil 10 minutes. Add shrimp and crabmeat and boil until hot. Serve on rice. Makes 1/2 gallon.
