QUICK BANANA BREAD | |
2 eggs 1/3 c. soft shortening 2 ripe bananas, peeled and sliced 2/3 c. sugar 1 3/4 c. sifted all-purpose flour 3/4 tsp. baking soda 1 1/3 tsp. cream of tartar 1/2 tsp. salt Preheat oven to 350 degrees. Grease 8 x 4 inch loaf pan. Combine eggs, shortening, bananas, and sugar in glass container of blender. Cover and blend 30 seconds or until smooth. Sift dry ingredients together in bowl. Pour blender combination over dry ingredients. Stir until combined; pour into greased loaf pan. Bake 45 minutes or until lightly browned. Turn out of pan to cool on cake rack. Cool; wrap in waxed paper. Chill several hours before slicing. |
