SWEET AND SOUR PORK | |
2 c. (1 lb.) cubed lean pork Marinade 1 tbsp. dry sherry 1 tbsp. soy sauce 1 recipe Basic Sweet and Sour Sauce (recipe follows) 1 green pepper 1 carrot 1 onion 1/2 c. cooking oil Cut green pepper, carrot and onion into chunks and parboil or stir - fry until the color changes. Marinate the pork at least 20 minutes. Heat the oil and deep fry meat until golden brown and crisp. Mix the accompaniments with the sauce and heat to boiling. Add pork and serve. BASIC SWEET AND SOUR SAUCE RECIPE: 1/2 c. brown sugar 1/4 c. catsup 1/2 c. pineapple juice or juice from 14 oz. can Pineapple chunks 1/3 c. cider vinegar 1/2 tsp. garlic powder 2 tbsp. cornstarch mixed with 1/3 cup water 14 oz. can pineapple chunks, drained Mix sugar, catsup, juice, vinegar and garlic together in a wok pan. Stir and bring to a boil. Stir in cornstarch mixture and stir until sauce is thickened. If you are using pineapple chunks, do not add until just before serving. They should only be heated through, not cooked. |
