ELAINE'S ZUCCHINI CAKE 
3 eggs
1 c. brown sugar
1 c. white sugar
1 c. vegetable oil
1 tbsp. vanilla
2 c. loosely packed coarsely grated zucchini
2 c. flour
2 tbsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 c. chopped walnuts

Beat eggs until frothy; beat together sugars, vanilla and vegetable oil until thick and lemon colored. Sift together dry ingredients. Add flour mix and zucchini to eggs. Fold in nuts. Pour into greased tube or Bundt pan. Bake for 1 hour at 350 degrees.
