SPINACH SOUFFLE | |
3 tbsp. butter 3 tbsp. flour 1 c. milk 1 1/2 tsp. chopped onion flakes 1/2 lb. sharp cheddar cheese, grated 1 c. cooked spinach, chopped and drained 3 eggs, separated Salt and pepper Make cream sauce of butter, flour and milk. Add onion flakes, salt and pepper and cheese. Remove from stove when cheese is melted. Add spinach and beaten egg yolks. Fold in beaten egg whites. Pour into lightly buttered loaf pan. Bake at 350 degrees for 45 minutes or until set. Put baking pan in a pan of hot water. |
