CHOCOLATE SOUFFLE | |
1/4 c. butter 1/4 c. flour 1/2 tsp. salt 1 c. scalded milk 3 oz. semi-sweet chocolate, melted 1/2 c. sugar 4 egg yolks 1 tsp. vanilla 4 egg whites, stiffly beaten 1. Melt the butter in a large saucepan. Add flour and blend well. Slowly add salt and milk, stirring constantly. Add chocolate and mix well. 2. Add sugar to the egg yolks, then pour into the chocolate sauce, continually beating. Add vanilla. 3. Fold in the stiffly beaten egg whites. 4. Pour into a buttered casserole or souffle dish which has been sprinkled with sugar. Put in a pan of boiling water and bake for 1 hour in a 325 degree oven. Serves 6. |
