CHOCOLATE SOUFFLE 
2 chocolate squares
3 tbsp. butter
1 c. cream
1 tsp. vanilla
1/2 c. sugar
1/3 c. flour
3 egg yolks

Over water (double boiler) melt butter, add flour and blend. Add cream and sugar and cook slowly until thick. Add chocolate and mix. Add egg yolks one at a time. Mix after each one. Add vanilla.

Beat egg whites until stiff, then add a pinch of cream of tartar. Fold into chocolate mixture, then pour into souffle dish (do not grease dish). Set dish in a pan of hot water. Bake in a preheated oven at 350 degrees for 1/2 hour or 40 minutes until a knife inserted comes out clean. Serve at once with whipped cream. Serves 6-8 people.
