SHOO-FLY PIE | |
2/3 c. brown sugar 1/2 c. flour 1 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 c. butter, softened 2 eggs 2/3 c. light corn syrup 1/3 c. molasses 1/2 tsp. baking soda 1 c. warm water 1 c. raisins 1 unbaked 9 inch pie shell Combine sugar, flour, cinnamon and nutmeg in a bowl. Using a pastry blender, work in butter until mixture is the texture of coarse meal. In a separate bowl whisk eggs, corn syrup and molasses until well blended. Dissolve baking soda in warm water and add to egg mixture. Sprinkle raisins in the pie shell and pour molasses mixture into the shell. Top with 1/3 of sugar mixture, sprinkling as evenly as possible. Bake 25 minutes at 400 degrees. Filling will be soft but slightly crusty. Sprinkle with remaining sugar and bake another 5 minutes. Serves 8-10. |
