PEACHY WHOLE GRAIN COOKIES | |
1 egg white 1/2 teaspoon almond extract 1/3 cup butter 3/8 cup sugar 3/8 cup brown sugar, packed 3/4 cup whole-wheat flour 1/2 teaspoon salt 1 teaspoon baking powder 1 1/4 cup oatmeal, regular or quick 3/4 cup peaches, diced 1/4 cup dates, chopped or raisins Beat egg white with extract, butter and sugars in mixing bowl. Combine flour, salt, and baking powder. Add to egg mixture and mix well with electric mixer. Stir in oatmeal, peaches, and dates. Drip by rounded (not heaping) tablespoons onto nonstick cookie sheet.
